Pumpkin Chocolate Protein Balls

Prep: 15 minutes Serves: 10-15 depending on size

Ingredients:

  • 1 cup canned pumpkin puree

  • 1/2 cup Orgain plant-based protein powder (or any protein powder of your choice)

  • 1/2 cup rolled oats

  • 1/4 cup almond butter (or any nut butter of your choice)

  • 1/4 cup honey or maple syrup

  • 1/4 cup mini chocolate chips

  • 1 tsp pumpkin pie spice

  • 1/2 tsp vanilla extract

  • A pinch of salt

Instructions:

  1. In a mixing bowl, combine the canned pumpkin, Orgain protein powder, rolled oats, almond butter, honey or maple syrup, mini chocolate chips, pumpkin pie spice, vanilla extract, and a pinch of salt. Mix well until all ingredients are thoroughly combined.

  2. Place the mixture in the refrigerator for about 15-20 minutes. This will make it easier to handle and shape into balls.

  3. After chilling, remove the mixture from the refrigerator. Take small portions of the mixture and roll them into bite-sized balls using your hands. You can adjust the size according to your preference. Place the pumpkin chocolate protein balls on a plate or tray lined with parchment paper.

  4. Optional: You can sprinkle a bit of extra Orgain protein powder on top of the balls for a protein boost and a decorative touch.

  5. Refrigerate the protein balls for at least 30 minutes to allow them to firm up.

  6. Once they are set, you can transfer the pumpkin chocolate protein balls to an airtight container and keep them in the refrigerator.
