Non-Dairy Creamed Spinach

Ingredients:

  • 1 lb. (16 oz) organic frozen spinach, thawed and drained

  • 1 cup unsweetened non-dairy milk (almond, soy, or oat milk)

  • 1 small onion or 1 leek, finely chopped

  • 2 cloves garlic, minced

  • 1/4 tsp ground nutmeg

  • 2 tbsp olive oil

  • Salt and pepper to taste

Instructions:

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion or leek and garlic, and sauté until they become translucent.

  2. Add the thawed and drained spinach to the skillet and cook for a few minutes, allowing any excess moisture to evaporate.
