I previously shared a sheet-pan dinner recipe with a Dijon mustard flavor, but in this easy sheet-pan dinner recipe, the flavor star is Trader Joe's Sri Lankan Organic Mango Chutney. We used to buy this chutney all the time and somehow it fell off the radar. On a recent Trader Joe’s run I saw in on the shelf and thought this would be the perfect item to use for a quick weeknight sheet-pan dinner! I paired it with chicken thighs, mini potatoes, and any veg on hand. This meal is not only a time-saver but also a crowd-pleaser that's perfect for any busy evening.

Now, let's dive into the delicious recipe!

Ingredients:

Prep: 15 min Serves: 4

  • 4-6 boneless, skinless chicken thighs

  • 1/2 cup Trader Joe's Sri Lankan Organic Mango Chutney

  • 1 pound mini potatoes, halved or quartered

  • Assorted veggies of your choice (e.g., bell peppers, broccoli, carrots)

  • Olive oil

  • Salt and pepper, to taste

  • Fresh herbs for garnish (e.g., cilantro or parsley)

Instructions:

  1. Preheat Your Oven: Start by preheating your oven to 375°F (220°C). This ensures that your sheet-pan dinner will cook evenly.

  2. Prepare the Sheet Pan: Line a large sheet pan with parchment paper or lightly grease it to prevent sticking.
