My friend recently reached out to me asking for some breakfast ideas to make while doing her elimination diet. This was no easy task as anything I came up with did not meet her dietary restrictions. There is a need for more allergy-friendly recipes and so I did some research to come up with an idea! As a busy teacher always on the go, I knew that breakfast had to be quick with basic pantry ingredients. Eggs? No… my friend is not a fan of eggs dishes. Non-dairy yogurt? No…. they all either contain nuts, coconuts, or oats. Gluten-free French toast? Yes! The French toast can be made ahead and then toasted or microwaved during a busy morning on the go.</image:title>
